Brunch anyone?  Here’s a round up of some beautiful brunch recipes you simply can’t go wrong with – just in time for Mother’s Day!

Gluten-Free Seeded Banana Date Muffins

As far as I’m concerned, nothing beats a delicious muffin warm from the oven.

Store bought gluten-free muffins are an easy alternative but are far removed from those that are homemade.  These muffins are slightly sweet as I also cut back on the sugar in the original recipe.  If these were made with a 1/4 cup of sugar, they would make a great side for a soup or salad or even as a  Thanksgiving bread.

The original glutinous recipe was found in Sunset magazine, my gluten-free interpretation follows.

One of the best ingredients in these muffins are dates.  If you are unfamiliar with dates, they look like this (see below).  Dates are incredibly nutritious, high in potassium and have a wonderful taste.  I used medjool dates from Trader Joe’s.  They do have a pit in the middle which is easily removed, just cut them open and it comes right out. Paleo Chocolate Chip Scone RecipeWhen this scone recipe arrived in my inbox I knew it would be an instant favorite.  I have always been fond of Elana’s Pantry and her creatively healthful recipes.  It has been difficult for me to make many of her beautiful almond flour recipes because of nut allergies in our house.  However, this recipe is nut free, grain free, low carb and gluten free- bonus!  Check out all of her wonderful recipes at the link above.

This scone recipe was a home run hit with my kids.  They thought these tasted like “mini sweet breads” and by the next morning they were all gobbled up before my husband had a chance to try one.

With a simple list of recipe ingredients, these are quick and easy to put together.  Better yet, all of the ingredients were found in my cabinets and fridge (I love when that happens).  This will be a recipe we will make over and over again. [Read more...]

Quick Gluten Free Bacon Egg Muffins for the Holidays

Look no further for a fun and quick twist on the average gluten free “bacon and eggs” breakfast.  This recipe is a must try- at least once.

With a houseful of people for the holidays, this naturally gluten free breakfast is bound to be a hit.  With five ingredients, it doesn’t get much easier to prepare!

At 100 calories a piece these beauties leave room for something else on your plate such as fresh fruit, potatoes or toast.

Gluten Free Banana Sushi

 

I saw this original recipe on the “Mommy? I’m Hungry!” website.  These little yummies were called “rolled banana snacks”  but I fondly renamed them Gluten Free Banana Sushi.

These ingenious little rolls make kids and adults smile.  This three ingredient snack is so simple, you needn’t be an adult to enjoy making or eating them!

Ingredients:

1. Banana’s, a nice firm yellow so they aren’t mushy

2. Peanut butter, almond butter, sunflower butter… your favorite by choice (maybe its Nutella?)
