Cauliflower Pizza Crust: Grain-Free, Gluten-Free, Low-Carb

I know it may be difficult to envision an entire head of shredded cauliflower adorned with pizza sauce and mozzarella, but trust me on this one – it’s simply amazing!  My kids and husband gave it an 8 out of 10 – impressive being that we’ve had a generous share of various gluten-free pizza crusts.

Bread-Free Sandwiches

Portabello and Halloumi “Burgers” –

Bread is over rated.  Get creative and try a bread-free sandwich – the sky’s the limit.

I typically try to eat more whole foods at lunch which may look something like this: an avocado, a tomato, an orange, baby carrots/ sweet organic peppers and hummus, almonds, coconut milk with a teaspoon of chia seeds and a big chunk of dark chocolate.  It may sound weird but with the hummus prepared the night before, you can slap lunch together in less than five minutes, and not even notice it was bread-free.

There are many people that are avoiding grains, understandably; but even if you aren’t, try one of these recipes to mix things up a bit.  Low carbohydrate lunches help to prevent the post-lunch ‘I need a nap’ feeling, which is enough of an incentive to go bread-free at least once next week.

Be sure to substitute as needed to make recipes gluten-free, two ingredients to be aware of are miso and soy sauce – both of which come in gluten-free varieties. [Read more...]

Gluten Free Flank Steak Recipe

steak, gluten free, protein, dinner  This gluten free flank steak recipe always produces glowing reviews from my family; I haven’t actually eaten this because I’m a vegetarian – who lives amongst meat eaters.  I’ve made the marinade for the steak a number of times but my husband cooks this to sheer perfection (apparently).

One of the tickets with this recipe is to ask the butcher to put the steak through the tenderizer again -  before they wrap it up for you.

In order for this to be a gluten free recipe, be sure you’re using a gluten free soy sauce or tamari for the marinade.  I usually make stuffed portabello mushrooms for the vegetarian option. [Read more...]

Gluten Free Berkeley Veggie Burger

When my tired airplane eyes focused on the foundation of this recipe it got an immediate dog ear.  Quality homemade veggie burger recipes are hard to come by and this one looked worth my time to amend.

Sorghum Bowl with Black Beans, Amaranth and Avocado

gluten free sorghum bowlSorghum, once a controversial grain for those living with celiac disease is now embraced by many.  Sorghum is an acceptable and tolerable gluten free grain for many living with celiac disease; it’s also a wonderful flour to bake with.

Similar in shape and size to Israeli couscous, sorghum is delicious in a brothy stew. The stout grains are a wonderful compliment to the soft black beans.

Amaranth and black beans are both rich in the antioxidant department; working together to keep the body in optimal health. You will find the colors and flavors in this recipe to blend beautifully together.

Thai Chicken Curry Recipe

Look no further if you love Thai food and would like to try your hand at making a Thai chicken curry recipe.  This dish is beautifully fragrant and comforting.  Serve with steamed rice and the dish is complete.

Thai Chicken Curry Recipe Ingredients

  • 2 teaspoons olive oil
  • 1 4-ounce jar red curry paste (adjust to your preferred spiciness)
  • 2 tsp brown sugar
  • 1/2 tsp cinnamon
  • 1/2 tsp cumin
  • 3/4 pound carrots, peeled, cut into 1/2-inch-thick rounds
  • 1 medium onion, chopped
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 pound sweet potatoes, peeled, cut into 1/2-inch pieces
  • 1 pound skinless, boneless chicken thighs, cut into 1-inch pieces or 1 block of cubed tofu (veggie option)
  • 1 13.5-ounce or 15-ounce can unsweetened coconut milk

Chard Leaves Stuffed with Rice and Herbs Recipe

Harvesting chard from the garden always makes me happy.  This hearty vegetable grows beautifully from spring to fall.  I usually plant rainbow chard as the veins are a variety of colors and are beautiful in their own right.  All parts of this nutritious veggie are edible and the health benefits are innumerable.

Gluten Free Black Rice Stir-Fry

gluten free black rice stir-fryThis gorgeous stir-fry is incredibly healthful with its shades of black, purple and green.  Taking a gander at all of the chopped ingredients, I knew this would be a delicious dish.  What surprised me was my kids reaction to it.  As I waited for unapproving groans about the “weird black rice”, they never materialized.  There were just a lot of positive yummy comments- I love when that happens.

Nevertheless, I have cooked with wild rice before but that is not what this recipe calls for.  Black rice (aka purple or forbidden rice) is a rich nutty tasting rice.  It’s fiber content parallels that of brown rice.  It turns a deeper purple when cooked which makes this dish shine.  Be sure what you select is gluten free, below a picture of the rice we used which clearly states gluten free.
